Local palm oil and ugba sauce is a traditional Nigerian delicacy that combines fermented African oil bean seeds (ugba) with rich palm oil and aromatic spices. To prepare this flavorful sauce, heat palm oil and sauté onions and peppers, adding seasonings and optionally ukpaka. Gently mix in the rinsed ugba, allowing it to simmer to absorb the seasoned palm oil.

- Palm oil
- Onions lots of onions
- Cow skin
- Scotch bonnet
- Ugba
- Scent leaf
- Big & small crayfish
- Salt
Saute Onions and Peppers:
Add Ukpaka and Seasonings:
If you're using ukpaka, add it to the pot at this stage. Continue stirring.
Add your preferred seasonings such as crushed seasoning cubes or powder, salt, and crayfish (if using). Stir to combine the flavors.
Serve:
Once the sauce is well cooked and the flavors have melded, remove it from heat.
Local palm oil and ugba sauce is typically served with dishes like boiled yam, plantains, or cassava. It can also be enjoyed with rice or served as a side dish.
