Singapore Noodles

These Singapore Noodles are packed with delicious ingredients and bursting with flavor, making them a perfect quick and satisfying meal.
- 1 pack of rice sticks Vermicelli you’ll find this in the Asian department of a grocery store.
- 1 pound of shrimp
- 4 chicken thighs cut into strips . Or chicken breast
- 1 red bell pepper
- 1 green bell pepper
- 2 Eggs
- Vegetable oil
- Seasoning
- Salt
- 1 yellow bell
- 1 white onion
- 1 tablespoon of cooking wine
- 3 tablespoons of light soy sauce
- 1 tablespoon of sesame oil
- 1 teaspoon curry
- 1 tablespoon of chilli flakes
- Spring onion
Marinate the Chicken:
Combine chicken strips with crushed black pepper, onion powder, garlic powder, seasoning cubes, and salt.
Stir well to coat the chicken evenly.
Cover and refrigerate for at least 30 minutes.
Prepare the Rice Stick:
Place rice stick in a bowl and pour hot water over it.
Let it soak for about 3 minutes (don't over soak).
Drain and rinse with cold water to stop cooking.
Set aside.
Make the Slurry:
In a small bowl, mix sesame oil, light soy sauce, Chinese cooking wine, curry powder, and red pepper flakes.
Set aside.
Cook the Eggs:
Heat some vegetable oil in a wok.
Crack eggs into the wok and scramble them.
Remove from the wok and set aside.
Cook the Chicken:
In the same wok, add a little more vegetable oil if needed.
Cook the marinated chicken strips over medium-high heat until fully cooked, about 7-8 minutes.
Remove from the wok and set aside.
Fry the Shrimp:
Add a bit more oil to the wok.
Add grated garlic and sauté for about 30 seconds.
Add shrimp, season with salt and pepper, and cook for 3 minutes until shrimp turn pink.
Remove from the wok and set aside.
Stir-fry the Vegetables:
Heat more oil in the wok.
Sauté sliced onions for 2 minutes until translucent.
Add carrots, bell peppers, and any other vegetables.
Stir-fry on high heat for 2 minutes to retain crunchiness.
Combine Everything:
Add the prepared slurry mixture to the wok.
Stir in the drained rice stick, cooked chicken, shrimp, and scrambled eggs.
Mix everything together thoroughly.
Garnish and Serve:
Garnish with chopped spring onions.
Serve hot and enjoy your Singapore Noodles!
