Pineapple Upside Down Cake

This Pineapple Upside-Down Cake is best enjoyed fresh and can be served with whipped cream or a scoop of vanilla ice cream if desired.

The bottom layer ( the top layer when flipped)
- 1 cup brown sugar
- 8 tblspns of sugar
- Pinnaple rings
- Cherries
Top layer ( bottom layer)
- 1 cup melted butter
- 1 cup of sugar
- 1 cup of sugar
- 1 cup Pineapple juice
- 4 eggs
- Chopped Pineapple
Dry Ingredients
- 2 cups and 3 quarter of all purpose flour
- 1/2 tspn salt
- 1 tspn of baking powder.
Preheat your oven to 350°F (175°C).
In a saucepan, melt the 1/4 cup of butter over low heat. Add the brown sugar and stir until it melts and forms a caramel-like mixture. Pour this mixture into the bottom of a greased 9-inch round cake pan, spreading it evenly.
Arrange the pineapple slices on top of the caramel mixture in the cake pan. You can place a cherry in the center of each pineapple ring if desired.
In a mixing bowl, whisk together the flour, baking powder, and salt. Set aside.
In another bowl, using an electric mixer or stand mixer, cream the softened butter and granulated sugar until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
Gradually add the dry ingredients (flour mixture) to the wet ingredients (butter-sugar mixture) alternately with the pineapple juice, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.
Pour the batter over the arranged pineapple slices in the cake pan, spreading it evenly.
Bake in the preheated oven for about 40-45 minutes or until a toothpick inserted into the center of the cake comes out clean.
Once baked, remove the cake from the oven and let it cool in the pan for about 5-10 minutes.
Place a serving plate upside down over the cake pan, then carefully flip the cake onto the plate. Allow the pan to sit for a minute before lifting it off the cake, ensuring that the pineapple slices stay in place on top of the cake.
Let the cake cool completely before serving. You can serve it warm or at room temperature.
